Monday night baking antics….

So tonight I was in the mood for baking.

Actually I half contemplated it yesterday and bought puff pastry and a tin of pie apples, but the mood didn’t strike.

Somehow tonight it did.

This was the result…

Donna Hay’s simple banana bread which I’ve made a few times before and is seriously easy.

What you need…

  • 4 medium ripe bananas (800g), peeled and chopped
  • ½ cup (125ml) light olive oil or vegetable oil
  • 3 eggs, lightly beaten
  • 1½ cups (260g) brown sugar
  • 1 teaspoon vanilla extract
  • 1½ cups (225g) self raising (self-raising) flour, sifted
  • 1 teaspoon ground cinnamon

What to do…

  • Preheat oven to 160 degrees
  • Mash bananas (I only had small ones so I used 8 small ones)
  • Ad oil, eggs, vanilla and sugar and mix
  • Add flour and cinnamon and mix
  • Put into a greased and lined loaf tray
  • Cook for 1 hours and 10 minutes

Then I made Donna Hay’s molten chocolate chunk brownie mix as I had it in the cupboard

What you need…

  • packet mix
  • 150g melted butter
  • 3 eggs

What to do…

  • Preheat oven to 160 degrees
  • Put packet mix, melted butter and eggs into bowl and mix
  • Add in chocolate chunks from box and combine
  • Put into greased and lined tray
  • Cook for 40 minutes
  • Cool in tray

Then I decided to do chocolate hazlenut apple turnovers

What you need:

  • puff pastry
  • egg (for top of turnover)
  • pie apple (yes I cheated)
  • crunchy hazlenut spread (it is like a crunch version of nutella)

What to do:

  • Thaw puff pastry
  • Preheat oven to 200 degrees
  • Grease tray
  • Cut puff pastry into 4
  • Put some hazlenut spread onto each piece of pastry
  • Put some pie apple onto each piece of pastry
  • Fold over and seal
  • Put egg wash on
  • Bake for 20 minutes, swapping trays after 10 minutes

Lastly I made sausage rolls

What you need:

  • puff pastry
  • egg
  • sausages (yes I cheated slightly)

What to do:

  • Thaw puff pastry
  • Preheat oven to 200 degrees
  • Grease tray
  • Cut puff pastry in half
  • Skin sausages and mix meat together
  • Put a line of meat down the middle of the pastry
  • Fold pastry over and seal
  • Put egg wash on
  • Bake for 20 minutes, swapping trays after 10 minutes
