Roasted pumpkin soup with pesto

Like I said I got cheap pumpkin on Friday, so tonight I did an easy early dinner…roasted pumpkin soup with pesto.

What I used:

  • a huge piece of pumpkin
  • a splash of oil
  • 1&1/2c chicken stock
  • 1 heaped teaspoon of basil pesto

What I did:

  • cut the pumpkin, removing the seeds and skin
  • put oil in the pan
  • add the pumpkin
  • cook at 200 degrees for about 45 minutes
  • put the pumpkin in a bowl
  • add the chicken stock and the pesto
  • mix with a stick mixer or blender or whatever you have
