Weekly baking

This past week has been a week of baking.

A friend turned 45 on Monday and requested a sponge cake…I’ve never made a sponge cake before in my life and won’t be entering any CWA sponge baking competitions any time soon, but as a cake it was nice, just not as light as a sponge cake is meant to be.

I used this Donna Hay recipe.  However I put cream and strawberries in the middle and more strawberries on top with icing sugar…and let’s say I’m not the biggest fan of strawberries.

Then on Thursday we had a fundraising day for Project Compassion to help with the disaster in the Philippines.  This meant a bit more baking…I ended up making 72 biscuits…I used this recipe but did one batch with a mix of white and caramel choc chips, one batch with smarties and one batch with jelly beans…I have to say I quite enjoyed the jelly bean biscuits.

Also on Thursday was another birthday…one of the cherubs turned 12 and asked me six weeks ago about making thema birthday cake.  They worked on the theory that if they asked with enough notice I would make it.  They also asked for a West Coast cake.  So I made this cake and put white icing on it, then decorated it with circles of blue then yellow smarties and jelly beans all over the top. The cherub was beside themselves with excitement and loved the cake, as were the other cherubs.
