Easy Saturday night dinner

Given that I’ve spent today voting, watching football, writing an essay (complete with PowerPoint presentation), having a nap, then watching rugby and football (flicking channels between the two) and completely ignoring the election, other than to vote this morning, I decided I needed a quick and easy to prepare dinner for tonight.

So I ended up doing a version of ratatouille, done in the oven with tomatoes, onions, green capsicum and zucchini and oven baked chicken schitznels using Maggi So Crispy to crumb the chicken.  I have to say the chicken was super crispy and super delicious!!!  I’ll definitely be trying Maggi So Crispy again.
